One Bowl Pumpkin Chocolate Chip Bread


It's that time of year again! What's the first thing you think of when Fall comes around? For me it's ALL things pumpkin! And this pumpkin chocolate chip bread is the first recipe I grab to get into the autumn spirit. It's such an easy bread to whip up. And the only equipment you need is a bowl and a spoon!


A couple of pointers I'd like to give for this bread.

  • My go to for pumpkin pie spice is the Trader Joe's brand. Its tastes the best from the others I've tried.

  • And make sure to use pumpkin "purée" NOT pumpkin pie filling.

  • This is a great recipe to double! I actually only make this recipe doubled. My family will down a whole loaf before they have even cooled. Believe me this bread goes fast!

  • This bread freezes really well! Just wrap in parchment paper and then in foil.


Ingredients


1 cup white sugar

1 cup brown sugar

4 eggs

2/3 cup water

1 cup oil

1 (15 oz) can pumpkin purée

1 tablespoon pumpkin pie spice

1 tablespoon cinnamon

1 teaspoon nutmeg

2 teaspoons salt

2 teaspoons baking soda

1 teaspoon baking powder

3 1/2 flour

2 cups chocolate chips ( keep 1/2 for topping)


Directions


  1. Preheat oven to 350 degrees. Grease 3 7x3 loaf pans.

  2. In a large bowl, lightly beat the eggs. Add sugars, water, oil and pumpkin purée. Mix well.

  3. Add all of the spices, salt, baking soda, and baking powder. Mix well.

  4. Gradually add the flour. Mix just till combined. Batter will be lumpy.

  5. Fold in 1 1/2 cups chocolate chips.

  6. Pour into greased prepared dishes. Sprinkle the remaining 1/2 cup chocolate chips on top.

  7. Bake for 50-60 minutes, when knife comes clean.




The holidays are coming up and this bread makes a wonderful gift! I recently gifted the bread and reused a cookie tin. It looks so pretty and I love to reuse items.


Another reason I love Fall is that it's a reminder that change is inevitable. Change can be scary, but growth and change go hand in hand. It's a chance to shed your old leaves and grow new branches.

I just made your pumpkin chocolate chip bread and it’s incredible! I used milk chocolate chips and olive oil since that’s what I had on hand, and it turned out so moist and delicious. My family loved it, and I’m sharing the second loaf with a friend. This recipe is definitely a keeper!
